Darjeeling, once a British hill station, is known for producing some of the world’s most prized and expensive teas. During the second flush, which begins in early May, the top two leaves and bud of each tea bush are plucked every seven days. Teas produced during this period have fuller flavor than teas from the first flush. You’ll notice toasty notes with flavors and aromas of nuts, butter, flowers and apricots.
