Honeybush is an evergreen shrub that grows in the eastern Cape of South Africa. As the name implies, it has a distinctly honey-like aroma. Hand harvested in September and October, the slender leaves and flowers are mechanically cut to release their oxidizing enzymes, then allowed to ferment in the sun. Naturally caffeine free, honeybush has a sweet, peachy flavor and a pinkish golden hue in the cup.
