A refreshing balance of sweet and sour, the daiquiri is an iconic summertime cocktail that's simple in execution and complex in flavor. Delicious as is, the daiquiri's classic combination of light rum, sugar and fresh lime juice also provides an exceptional foundation to build from when incorporating tea in cocktails, especially when it's our Hibiscus Mango Iced Tea.

Hibiscus Daiquiri

Ingredients

  • 2 oz Hibiscus Mango Iced Tea concentrate*
  • 2 oz light rum (we used Magdelana Rum from our neighbors at House Spirits Distillery)
  • 3/4 oz fresh lime juice
  • 3/4 oz 1:1 simple syrup
  • Soda water
  • Lime wheel

Directions

  1. Pour 2 oz of Hibiscus Mango concentrate, rum, fresh lime juice and simple syrup into an ice-filled shaker tin and shake for 6-10 seconds.
  2. Double strain into a collins glass with ice.
  3. Top with soda, garnish with a lime wheel and enjoy. 

*Hibiscus Mango Iced Tea Concentrate

Directions

  1. Bring spring or freshly drawn filtered water to a boil (212 degrees).
  2. Steep 1 oversized sachet of Hibiscus Mango Iced Tea in 8oz of water for 5 minutes.
  3. Remove tea and water back up to 8oz. Let cool. Will make enough concentrate for 4 mocktails.

Notes

  • To bottle these for your next dinner party or summer barbecue, just multiply the recipe by the number of guests.
  • Wash and sanitize 187 ml bottles. Let dry.
  • Measure and pour ingredients, except soda, into a large pitcher. Stir to combine.
  • Using a funnel and fine mesh strainer, carefully fill each bottle half full and then top with soda.
  • Cap with a bottle capper, refrigerate and enjoy.
