The dried flower of a subtropical evergreen tree that can grow to heights of 40 feet, cloves are grown in Madagascar, Southern India, and Indonesia. Harvest happens from March to May, when the outer buds turn light red just before they open. Dried in the sun, these buds become their signature dark reddish black.
