This light, airy dessert comes together easier than you’d think with only three ingredients, and the color alone is enough to stop you in your tracks. Blackberry Jasmine Parfaits

Makes 6 Small Parfaits

Ingredients

  • 1 Blackberry Jasmine Sachet
  • 2 ¼ cups hot water
  • 2 cups half and half
  • ½ cup granulated sugar
  • 6 tablespoons corn starch
  • 2 tablespoons lemon juice
  • 2 teaspoons powdered butterfly pea flower
  • 1 cup fresh blackberries
  • ¾ cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla bean paste

Directions

  1. In a medium saucepan add a Blackberry Jasmin Sachet with 2 ¼ cups water and let it seep for 5 minutes. Remove the sachet and let it come to room temperature.
  2. Add two blackberries into each parfait cup and muddle until all the juices have released. Set aside.
  3. In a small bowl, whisk the sugar with corn starch until no clumps remain. Add to the cooled tea and whisk again until smooth. Add the half and half. Place over medium heat, stirring constantly until thickened, about 10 minutes.
  4. Remove from heat and add the lemon juice and whisk. Pour half of the mixture over the muddled blackberries.
  5. Add the butterfly pea flower to the remaining mixture and whisk until combined. Pour on top of the parfaits for a layered look. Cover each parfait with plastic wrap and set in the fridge for 1-2 hours until set.
  6. Before serving, whisk the heavy whipping cream with the powdered sugar and vanilla bean paste until soft peaks form. Dollop on top of each parfait and top with extra fresh blackberries and edible flowers.
