Green and White Tea

Each is chosen with great sensitivity to season and picked for the way it blends with the present moment.
GREEN
Lightly processed, green tea is usually made from the tender top two leaves and buds of the tea plant. The fresh leaves are heated after plucking to neutralize oxidation, then quickly shaped and dried to retain their green color and fresh flavor.
WHITE
White teas are the least processed of any tea category. In the making of white tea, only the bud or top leaves and bud are plucked and allowed to wither and dry β naturally or by heat. Some oxidation will naturally occur during this process.
